Banana bread recipe! | Bake off Sunday | CarolynNotCaroline




Hello! I'm back! It's been a long long time since I've written a blog post. I may be a year older but I haven't grown any taller! Here's a little quick and easy baking recipe for banana bread (something that I've been making quite a over the summer) and it's delicious!



 2-3 ripe banana
1 cup of sugar (brown or white, your choice
1/3 cup of melted butter (unsalted)
1 egg
A pinch of salt
1 teaspoon of vanilla extract
1 teaspoon of baking soda 
1 and 1/2 cups of plain flour




  1. Firstly pre-heat your oven to 175-180 degrees celsius and butter a loaf tin.
  2. In a large mixing bowl, mashup your bananas using a fork until they are of a consistency similar to porridge.
  3. Stir in the melted butter, sugar, salt, beaten egg and vanilla extract.
  4. Then using a wooden spoon fold in the dry ingredients (baking soda and flour)
  5. Mix together until you get a smooth/thick batter (that looks a bit like peanut butter)
  6. Pour batter into loaf tin and place it in the oven for 50 minutes to 1 hour.
  7. The skewer test. Stick a skewer into the bread (at 50 minutes) and if the comes out clean, your banana bread is fully cooked!
  8. Leave the bread to cool for 15-20 minutes.
  9. Remove the bread from the loaf tin and serve with fruit of your choice. I chose strawberries!
